    We'll begin with Empanadas, pastries filled with beef, tomatoes, potatoes and herbs. Flautas are next with chicken in a jalapeno/garlic paste and fried crisp in corn tortillas. We'll then prepare authentic Mexican rice prepared with onions, garlic, tomatoes and fresh cilantro along with Mexican style corn prepared with lime aioli, cayenne pepper and Cotija cheese. Fajitas follow with tender strips of marinated beef and chicken with fresh sauteed bell peppers and onions wrapped in a warm tortilla shell. We’ll finish this fiesta with a Yucatecan-style delight, fresh coconut blended with rich custard in a wonderful nutty crust, baked to a caramelly brown and served with crème fraȋche.   • Holiday Cookie Bake and Decorate!

    Are you looking to start or continue a holiday cookie baking and decorating tradition? Consider registering for this On-Line, Live, Family Friendly Fun Holiday Cookie Class for beginners. Gather your family for baking and decorating, or treat yourself to some quality personal fun time. Learn how to make Royal Icing and the basics for decorating cookies with it at home. Participants will be baking the cookies ahead of time so that they are ready to decorate at the start of class. A PDF with two of the instructors personal sugar cookie recipes and a list of ingredients and supplies needed for the Royal Icing will be provided at least a week before the class, to provide time for shopping and baking. The recipes will include a soft and chewy sugar cookie and a denser crisp sugar cookie. Participants can choose to bake one or the other or both using your favorite cookie cutters! One of the instructor’s favorite holiday cookie cutter shapes is a gingerbread person. This is one of the shapes that proves to be a lot of fun to decorate year after year and some time will definitely be spent on this in addition to other holiday shapes. No fancy decorating tips or bags will be needed. We will be using simple plastic sandwich bags to decorate.     You've tried the rest. Now try the best truffles of all - and you will make them yourself! These make delightful gifts and decadent treats. Instructor Nancy Burgeson has shown thousands of students how to make these rich, chocolaty delicacies. After this one class, just 3 hours, you'll be making truffles for all of those special occasions from graduations to weddings and more! We will make five different recipes in class and each student will take home a nice box of truffles. A $12 supply fee will be collected at class. Optional: truffle/candy kits ($20) are available for purchase for future candy-making projects. Unfortunately, we are not able to accommodate nut allergies in this class.
