    Artisan Bread in Five Minutes a Day

    Save lots of money, increase your kitchen expertise, and enjoy fresh bread every day with this simple bread dough that you store in the refrigerator and bake on your schedule. In class make a batch of dough to take home, get recipes for several artisan bread options, and sample a variety of breads. Bring a 4 quart mixing bowl with cover, a set of measuring cups and spoons, and a large mixing spoon to class. Demonstration, hands-on and tasting. You will leave class with a batch of bread dough and a warm loaf of bread that you make and bake in class. $9 supply fee payable to instructor in class. Carol Schaub, an avid “kitchen-creator”, is a skilled instructor who thinks time in the kitchen should always be a fun and creative time.

    Friends in the Kitchen

    Get ideas for new recipes, new cooking techniques and tips for cooking for 1 and healthy eating on a budget! Learn how to make flavorful, healthy meal choices you can cook at home - taste them in class - and go home with the recipes. The meals are designed to be freezer-ready, shareable, and they avoid using processed ingredients. The class is geared toward those who have mobility limitations, special dietary needs, or want to learn how to eat healthy without spending a lot of money. There is no cost to attend the class, but please register in advance! This class is offered in partnership with LSS of Minnesota and FREE thanks to a Healthy Living grant from the City of St. Louis Park!

    Tantalizing Thai Cuisine

    You'll begin by preparing Vietnamese summer rolls served with both hoisin and peanut sauce for dipping. Vietnamese spring rolls follow made with pork, chicken, and glass noodles stuffed in rice paper, fried crispy, and served with the classic nuoc cham for dipping. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles using chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, sesame oil, lemon and crushed red pepper flakes. For dessert, refreshing Thai lime custard topped with fresh whipped cream. All ingredients and supplies for this class are included in the registration fee.

    The Art of Sushi

    Come explore the world of sushi as you create this Japanese delicacy yourself. We'll begin by preparing the coveted sushi rice then you'll learn the art of "nigiri-sushi"(hand molded rice) topped with shrimp, unagi, tamago, ahi tuna, and more. You'll then learn how to prepare "maki-sushi" using a bamboo mat to roll rice with various fillings in and around Nori (seaweed sheets). Options and accompaniments will include surimi, cucumber, avocado, cream cheese, teriyaki chicken, tempura onions, spicy mayo, eel sauce, wasabi, pickled ginger and soy sauce. All supplies are included in the registration fee.

Many people want to reduce their meat consumption but don't know how and are especially concerned about how they will meet their protein needs. We'll discuss various plant-based proteins, how to use them and cook with them in this fun hands-on class. You'll learn about the power of the plant-based plate- delicious and nutritious- good for you and good for the planet!
